Apple Cranberry Bagel Pudding With Almond Butter Glaze
Our good friends over in Boulder Colorado teamed up with us this Fall season to give you something fun and new this Thanksgiving! Move over apple pie and pumpkin treats because our healthy low carb treat curated with love by way of us and Justin’s is your next staple point in your Holiday feasts!
- 1 cup Almond Milk
- 1/4 cup Coconut Sugar
- 1 Egg
- 2 teaspoons Cinnamon
- 1 teaspoon Vanilla
- 4 cups Alternative Cinnamon Spice Bagels, cut into 1-inch pieces
- 1 Apple, sliced
- ¼ cup Dried Cranberries
- 1/4 Cup Maple Almond Butter
- 2 teaspoons Coconut Oil, melted
Preheat oven to 350°F. Mix milk, sugar, egg, cinnamon, and vanilla in a large bowl until well blended. Stir in bagel pieces, apples, and cranberries. Spread evenly in a 1-quart baking dish sprayed with non-stick cooking spray. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Melt Maple Almond Butter and coconut oil in a small bowl in the microwave (about 30 seconds). Drizzle over bread pudding and serve warm.
